Being an Indian( and an American), I feel I can comment on Indian cuisine.. its so true– as you guys have pointed out— that the most popular Indian cuisine in most parts of the world, especially the western countries, is the mughalai cuisine — Chicken tandoori, chicken tikka masala, Muton shheesh kababs( orginally SEEKH kabab, seekh meaning SKEWER) Mustard saag ( sarson ka saag) paneer palak ( paneer saag) etc. but havin said this there re innumerable other highly tasty, healthy and nutritioius dishes you get in India.. mostly vegetarian. For example there is the incomparable KADI , which is made out of combo of yogurt and garbanzo ( gram) flour in hot n spicy sauce– its so tasty! plus there rae samosas kachoris, pilaus, masala bhaat( spicey rice with plenty of veggies ) eggplant bharta, bhindi masal ( spicy okra) parothas — veggie chicken ground lamd -mmmmm simply delicious– oarathas are made out of whaet dough with delicious fillings and haeted on a hot pan with little oil or ghee( clarified butter) the list of delicious NON mughalai indian food is long.. but pls be ware that some foods you goota deveope a taste for, and then you wont ever forget them!

PS: indoia is perhaps the only country in the world where majority of the poeople eat vegertarain food.. the reason for this is (believed to be)India’s traditional love for mercy compassion and abhorrence and rejection of violence– well for most cases at least
